Thai Sweet Potato soup

I knocked this up for my daughter’s impromptu birthday party to feed the parents. We were supposed to have a woodland party to celebrate Rosa’s 4th birthday but storm Ewan put paid to that. I made this for 15 or so people:

chop 5 cloves garlic, a plum sized piece of ginger and 2 small green Thai chillis, fry in a tbsp. coconut oil until tender,

add 2 chopped onions, 3 chopped carrots and 5 large diced sweet potatoes, continue to saute then add 2 litres low salt veg stock and 3 kaffir lime leaves, simmer until veggies softened.

Waz it all up then add 1/2 tin coconut milk and two large tbsp.’s smooth peanut butter.
